- Place an oiled pan on medium heat. Add the jackfruit and sauce to the pan. Shred the jackfruit by mashing it with a fork or spatula. Cook and stir for about 8 minutes. Let cool so it doesn't melt the cream cheese.
- Spread 2 Tbsp cream cheese over each tortilla. Divide the jackfruit into even layers over the cream cheese. Sprinkle with vegan cheddar then layer with spinach leaves.
