Hi friends, Meet your new favorite dessert- Nature’s Charm Coconut Apple Pudding!
Like most people, I had never heard of coconut apples (sometimes called coconut embryos) until recently! I was so excited to discover that not only are they a superfood, but they’re incredibly creamy and delicious as well.
Coconut Apples grow inside coconuts after they ripen and fall to the ground. They’re the part of the coconut that grows into a new tree, so they’re packed with nutritious goodness!Â
Superfood desserts are my absolute fave! How cool is it to be able to enjoy a scrumptious treat while knowing your body and all your little cells are benefiting just as much as your taste buds?
This coconut apple pudding is really versatile too! It can be enjoyed straight from the can or warm with whipped coconut cream!
You could also lightly mash it and freeze it into popsicles for a summertime treat! My favorite way dessert to make with the coconut apple pudding is 2-Ingredient Vegan Coconut Apple Bread Pudding!
It couldn’t be easier. All you have to do is cube the bread, lightly mash the pudding, toss it with the cubes, and bake. Top it with vegan ice cream, obviously!
The only thing that could make this Vegan Coconut Apple Bread Pudding more delicious is if you top it with some Nature’s Charm vegan salted caramel sauce. That stuff is AMAZING!
For a more whole food plant-based alternative, try it with my vegan salted caramel date sauce!
- 2 cans Nature's Charm coconut apple pudding
- 6 slices day old bread
- Preheat the oven to 350 F. Slice the bread into bite sized cubes.
- Lightly mash the coconut apple pudding. Mix the bread cubes with the coconut apple pudding. Transfer the mixture to a lightly greased 8x8 baking dish. Bake for 30-40 minutes until the top lightly springs back when tapped.
- Serve with vegan ice cream, a sprinkle of cinnamon, and vegan salted caramel sauce.
