Let’s celebrate the last weekend of Pride Month with some Rainbow Pride Pancakes! Perfect for when brunch needs to be as bright, bubbly, and over the top.
Essential Ingredients
Grab these easy-to-find kitchen staples and let’s get the party started:
- Flour, sugar, and baking powder—the trusty trio for pancake perfection.
- Nature’s Charm evaporated coconut milk, coconut whipping cream, and vegan salted caramel sauce—for that creamy, dreamy texture and tasty toppings.
- Aquafaba—the magic vegan ingredient that binds it all together.
- Melted vegan butter and a splash of vanilla—because yummy flavor is key.
- A rainbow of food dyes—because we’re here to celebrate color!
Pancake Prep Play-by-Play
Step 1: Batter Up
Mix your flour, coconut milk, water, aquafaba, melted butter, sugar, vanilla, baking powder, and a pinch of sea salt in a big ol’ bowl. Stir until it’s just combined—overmixing is the pancake police’s number one offense.
Step 2: Color Wheel Time
Pour that batter into six separate bowls, then channel your inner artist by adding food dye to each one. Aim for bold and bright because these pancakes are meant to stand out!
Step 3: Griddle Magic
Heat up your griddle (medium style) and grease it lightly. Scoop about 1/4 cup of each colorful batter onto the griddle. Cook them low and slow to keep the colors from browning too much—patience here makes for prettier pancakes.
Stack, Drizzle, and Dig In!
Once you’ve flipped your last pancake, it’s time to build that stack. Layer them from purple on the bottom up to red on top, like a true rainbow. Crown your creation with some fluffy whipped coconut cream and a generous drizzle of vegan salted caramel sauce. Because if your pancakes aren’t dressed to impress, are you even brunching?
